One-Bowl Walnut Cookies 核桃酥饼
Crumbly, sandy Chinese-style walnut cookies. No mixer. One bowl.
Ingredients
- 65 g salted butter, softened
- 50 g caster sugar
- 1 egg yolk
- 15 g beaten whole egg (about 1 Tbsp)
- 110 g cake flour or low-gluten flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 25 g walnuts, finely chopped
- Pinch black sesame seeds (optional)
Method
- Preheat oven to 340°F (170°C). Line a baking sheet.
- In one bowl, mash butter and sugar until smooth.
- Mix in egg yolk and beaten egg until glossy.
- Sprinkle in baking powder and baking soda. Stir well.
- Add flour and fold gently until just combined.
- Fold in walnuts and sesame.
- Roll 1.5 Tbsp dough into balls and gently flatten.
- Bake 20 minutes until lightly golden.
- Cool 10 minutes before moving.
Tip: Walnuts should be chopped to 2–4 mm pieces. Not powder, not chunks.
