One-Bowl Walnut Cookies 核桃酥饼

Crumbly, sandy Chinese-style walnut cookies. No mixer. One bowl.

Ingredients

Method

  1. Preheat oven to 340°F (170°C). Line a baking sheet.
  2. In one bowl, mash butter and sugar until smooth.
  3. Mix in egg yolk and beaten egg until glossy.
  4. Sprinkle in baking powder and baking soda. Stir well.
  5. Add flour and fold gently until just combined.
  6. Fold in walnuts and sesame.
  7. Roll 1.5 Tbsp dough into balls and gently flatten.
  8. Bake 20 minutes until lightly golden.
  9. Cool 10 minutes before moving.
Tip: Walnuts should be chopped to 2–4 mm pieces. Not powder, not chunks.
